Plum Recipes
Spiced Plum Bread
Cream together:
1 egg
1/2 cup honey
2/3 cup sugar
1 tsp. vanilla (no shortening)
Sift together and add:
2 cup flour
1 tsp. baking soda
1/2 tsp. cinnamon
Stir in:
2 cups chopped and pitted plums
1/2 cup walnuts (optional)
Pour batter into a greased 9" x 5" inch loaf pan. Bake at 350° for 50-60 minutes.
Plum Oat Bars
Combine:
1/3 cup light brown sugar
1 cup flour
1 1/2 cups quick rolled oats
3/4 cup margarine
1 tsp. lemon zest
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. baking powder
Pat about 1/2 of this mixture into the bottom of a greased 9" square pan. Bake at 375° for 10 minutes.
Remove from oven and cover with:
1 1/2 cups chopped plums, mixed with 2 Tbsp. sugar.
Bake another 20 minutes or until golden brown. Cool. Cut into bars.
Plum Upside-Down Cake
1/ 4 cup margarine
2/3 cup of brown sugar
10-12 plums
9 oz. box of yellow cake mix
Melt margarine in a 9" x 12" pan. Spread brown sugar over the melted margarine. Slice plums and place on top of the sugar mixture. Prepare cake mix according to package directions and spread over plums (very thin cake layer). Bake at 375° for about 35 minutes. Cool for 5 minutes, then invert into a serving platter. Serve warm or cold with whipped topping.
Plum Crisp
Combine the following topping and set aside:
1 cup flour
1/2 cup quick oats
1/2 cup margarine
2/3 cup brown sugar
Combine the following and place in greased 9" baking pan:
4 cups sliced plums
1/3 cup sugar
3/4 tsp. cinnamon
2 Tbsp. flour
Sprinkle topping (first mixture) over the plums and bake at 350° for 40 minutes.
Serve warm with ice cream or whipped topping.
Sour Cream Plum Nut Bread
Cream together the following:
1 cup margarine
2 cups sugar
2 tsp. vanilla
Add 4 eggs—one at a time.
Sift together the following:
3 cups flour
1 tsp. salt
1 tsp. cream of tartar
1/2 tsp. baking soda
Add alternately to sugar mixture with 3/4 cup dairy sour cream and 2 tsp. lemon zest.
Stir in 2 cups diced plums and 1/2 cup walnuts or pecans.
Pour into 2 greased 9" x 5" loaf pans.
Bake at 350° for 50 minutes.
